I know, I know, protein powder is not Paleo and it is certainly a hot button topic for die hard Paleolithics. For me, it’s my 10%. By 10% I mean it’s one of the few things in my diet that may not be considered Paleo. There are way worse things than protein powder though. For me, I feel it only contributes to my healthy living and not hinders it.I occasionally make a protein shake or use every whey as my post workout muscle refueling source if I can’t get home immediately to prepare a meal. I bake with it on occasion and sneak it into things my kids are unaware of. I say, if it’s one of your only vices, go for it. This recipe is inspired by a friend, Billy Groux, who is a Crossfitting, Paleo eating machine. Not a shabby golfer either 😉Ingredients: (makes roughly 8-10 medium sized pancakes)
- 1 scoop chocolate protein powder of your choice
- 2 overly ripe mashed bananas
- 4 whole eggs
- 1 cup almond meal
- Pam or olive oil spray or coconut oil
To 4 whisked eggs, add mashed banana, almond meal and protein powder. Fold and combine well but do not over mix or you will have dense rocks for pancakes. In a large skillet, coat with coconut oil or Pam spray and cook up lightly on both sides. I used a lid to help trap heat and cook throughout.Top with banana slices, honey, walnuts or add almond butter. Or, all of it!Live healthy,
