Turkey Lettuce WrapI forgot to post this meal with all the craziness happening around here.

It’s actually been a much better day for me.  I made a huge effort to control myself and try not to cry all day.  If you are not familiar with why, it’s because we just lost our yellow lab of 10 years. A good attitude and positive outlook is a choice and I simply woke up today and chose it.  I must say, I’ve done a pretty good job. I miss Jake, but my life can not stop.  I must keep moving forward and cherish the memories we’ve had with him.

On a lighter note…I made this recipe last week.  It’s lettuce wraps done with turkey instead of chicken.  It’s just what I had taken out of the freezer. I am notorious for being able to take a bunch of stuff out of the fridge or freezer and improvise.  I think that’s what I would call it.  When you’re too lazy to hit the grocery store yet realize you have more than enough to make do.  I have come up with some pretty innovative things in this manner.  And to think, I never would really coin myself as “creative”.  I usually do chicken, but I don’t even think my husband noticed.  It was a filling yet light meal.

I used:
1 pound of ground turkey or ground chicken
1 head of bibb lettuce
1 clove of garlic
1 green onion as garnish
1-2 tbsp soy sauce
Sriracha Hot Chili Sauce
a dash of crushed red pepper or cayenne

I browned the turkey a bit and then added the garlic and soy sauce towards the end.  I seasoned with red pepper and Sriracha Hot Chili Sauce. Served it up on some bibb lettuce and garnished with chopped scallion.  Viola!
