paleo stir fry

So, you say to yourself, “Sure, I’d love to eat Paleo, but who has time to cook all those special meals?”

News flash…you DO have time and they DON’T take so long. Listen, I have 3 kids, a husband, a busy life, full schedule, like everyone else on the planet, blah, blah, blah. I make it work. If you are to do it, it must work for you and not the other way around.

That is why you may notice I do an awful lot of stir fry dishes. Hey, if you have ground beef, ground chicken, ground turkey, ground whatever, a frozen bag of mixed veggies or fresh on hand, you are already there. That said, preparation is key. Have these things on hand or remember to defrost something when you walk out the door in the morning. A stir fry takes a matter of minutes. No baking, and not several dishes to clean. With the seasonings of choice, you can go to Vietnam, Thailand, Mexico, wherever you want, all in one dish.

I made this stir fry the other night. Had my little guy home sick with a low grade fever and ear infection. He was up all night before. I was feeling like crap. Missed my workout to head to pediatrician. Whiny and clingy as ever, he was. Luckily I was able to hit a quick run with my daughter and grab a 12 minute workout. I think I came back to life around 5 pm. I had no clue what I was making for dinner as I’ve usually squandered up something in my head by at least lunch time. Nothing, nada, zip. Then, like the clouds parting to reveal the Super Moon, a lonesome package of ground turkey sat resting gently on the lower shelf of the fridge. Just then, an epiphany. I’ve got it, move aside. Dinner is served!

To make this simple recipe, you will need:

1 lb ground turkey
coconut oil
coconut aminos
1 bag frozen broccoli
1/2 bag of frozen red, yellow and green bell peppers
a handful of pea pods
turmeric
garlic powder
onion powder
cumin
sea salt
black pepper
