I’ve been using butter lettuce as a vehicle for everything lately.
I had marinated some chicken in my latest favorite concoction. It’s super flavorful and I almost always have the ingredients on hand. It’s actually a copycat version of how the restaurant chain Chipotle season their chicken. It’s not exact, but it tastes pretty good regardless.
For the marinade:
olive oil
chipotle peppers (dried) 2 tsp
salt 1/2 tsp
pepper 1/2 tsp
1 red onion rough chopped
2 cloves of garlic
cumin 1 tsp
cayenne pepper 1/2 tsp
1/2 c water
Combine all ingredients in a food processor. You may add a few drops of water to the mixture as you prepare. It will turn out a bit like a paste. Marinate chicken for 24-48 hours.
Recipe:
1 lb boneless skinless chicken breast
1 head butter lettuce (I buy organic)
coconut oil 1 tsp
1 head fresh cauliflower (can use frozen)
1 pkg mushrooms
1/2 c balsamic vinegar
salt
pepper
garlic powder
I sauteed the cauliflower in coconut oil until tender. Season with salt and pepper to taste. I sauteed the shrooms in some balsamic vinegar and seasoned with a bit of garlic powder. After grilling and dicing your chicken, place on washed sections of butter lettuce leaves. Good stuff!
