I love avocados! They are a great source of healthy fat. Here’s one of my favorite things to do with them.
A simple recipe for fresh homemade guac.
All you need is:
1-2 ripe avocados
1 small tomato diced
2 tbsp green chilies (optional)
1/4 cup red onion
1-2 tbsp fresh cilantro
1 small lime juiced
Cut open the avocados and discard the pit. Scoop out the meat and mash with a fork. I like mine a bit lumpy, but it’s your call. Add all other ingredients without over mixing. Serve on top of your entree or with with celery or kale chips.
Great on blue corn tortilla chips too if you’re not rockin the Paleo thing. Oh, and a Margarita to wash it all down with. A skinny one 🙂
