So your team didn’t win the Super Bowl…have no fear, I’ve got a remedy for you!  It’s sweet, simple, grain-free, gluten-free and you’ll go nuts for it.  What is it?  Why I’m referring to my Paleo Cavegirl Bars of course!  Best of all, making them with almonds will have you winning again or at least in the health department.

Did you know the benefits of almonds range from the reduction of cholesterol levels and lowering risk of heart attack, to aiding in the prevention of cancer?  With so many great reasons to incorporate almonds into your diet, I’ve taken to baking them right into my Cavegirl Bars for a delicious way to enjoy these tasty little powerhouse nuts.

I love  making my own trail mix as an easy grab-and-go snack and using almond meal in place of processed white flour as a healthy alternative. With so many ways to enjoy almonds, get creative and reap the rewards in the process!

Cavegirl Bars

Note: for Caveman Bars, add more nuts 😉

Ingredients:

  • 2 cups raw almonds
  • 1 cup dark chocolate chips
  • 1 cup dried cranberries
  • 1 cup unsweetened coconut flakes
  • 2 whole eggs
  • 2 tbsp. coconut oil

Instructions:

Preheat oven to 350 degrees

In a single layer, spread almonds on a cookie sheet. Bake for 12 minutes to roast them. When finished, leave your oven on at the same temperature as you complete this next step.

Combine all the dry ingredients, except the chocolate, in a Cuisinart. Pulse until you achieve a fine chop. Add the coconut oil gradually until combined well. You may have to stop and scrape the sides down a few times during this process.

Transfer to a mixing bowl and fold in your eggs. Combine well and add dark chocolate chips. In a shallow greased baking dish or nonstick pan, press into a 1 inch layer.

Bake for 25 minutes at 350

Try this!

Add any combination of dried fruit…anything goes!
