Pumpkin Protein MuffinsHome stretch people!  Just two days until my NPC show and I can’t tell you how many bags I have in my freezer of muffins, cookies and things I’ve baked and shared and only just stared at.  My time is coming.  This time next week I will be eating very clean still, but will at least be able to eat the things I make.  I do love to drink wine while I cook dinner many nights, so I do look forward to that.

I made an attempt at a healthy muffin for my kids.  While this isn’t a totally Paleo muffin (unless you are someone that allows for Greek yogurt), it is still a healthy muffin and a much better choice than most others.  I would venture to say that many of you that eat Paleo do occasionally eat a modified Paleo diet and this would potentially still fit the bill.  I don’t eat dairy as a preference, yet many cavepeeps do.  I’m just thrilled when my kids will eat a healthier version of anything even if they don’t realize they are doing it.

Ingredients:

  • 1 c coconut flour
  • 2 scoops whey protein powder (vanilla or unflavored)
  • 1 c canned organic pumpkin
  • 2 tsp pumpkin pie spice (make your own-recipe  below)
  • 1/3 c agave nectar or3 tbsp of honey
  • 5 whole eggs
  • 1/3 c vanilla Greek yogurt
  • 1/2 c water
  • 1tbsp vanilla extract

Pumpkin Pie Spice Recipe:

  • 4 tbsp ground cinnamon
  • 4 tsp ground nutmeg
  • 4 tsp ground ginger
  • 3 tsp ground allspice

Whisk eggs and combine all wet ingredients.  Then add in all of your dry ingredients and combine well.  In greased cupcake tins or silicone liners, spoon batter evenly and bake for about 20-25 minutes at 350 degrees.  Check muffins and you may need an additional 5-7 minutes.
