I’m heading off to Bombshell Camp soon and actually really looking forward to getting my butt kicked.  I will work with my coach on my training, diet and posing to help position me well for this season.  I could really use the heightened mojo right about now.  Training day in and out can and will get boring if you don’t change it up and try new things.  Yes, you need to keep your muscles guessing, but you also need to keep your mind guessing to avoid the monotony of repetition.  We all know the definition of insanity and I was beginning to feel myself getting to that point with my current regimen.  I know from previously competing what I did right and what I can do better.  Having focus on those goals helps keep me motivated and looking forward to both of my May shows.  I’m going to Nationals this year and want the best chance I can give myself at placing well.

As with my training, my current diet needs a bit of change as well.  Looking for a super simple, minimal ingredient, fast, healthy weeknight meal?  Aren’t we all? Well, here it is!  With just these few ingredients, you are on your way to Happy Town.  Or as Teresa Giudice from the Housewives of New Jersey says, “ingrediences”.  What the?   Way to go get an edumacation.

Ingredients:

  • 1 lb grass fed ground beef
  • 4 zucchini
  • 1 can organic diced tomato
  • 1- tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • 1tsp of coconut oil or olive oil

Directions:

Using a mandoline or vegetable slicer, cut all of your washed zucchini into noodles and set aside.  Brown and season your ground beef and drain. In the meantime, use the same pan to sauté the zucchini noodles over medium/high heat with a bit of coconut or olive oil.  Sauté for about 2-3 minutes.  Put aside in another bowl when cooked and softened.  Using the same pan, put can of diced tomatoes and fully cooked ground beef in and sauté adding additional seasoning if desired.  Once fully heated, plate over warm zucchini noodles and enjoy a delicious and healthy meal!
