Yeah, you heard me right. Sounds like an oxymoron doesn’t it? No offense to those pretty cook books with all things Paleo baked goods, but if I don’t eat sugar, I don’t want a pretend cupcake or faux cookie or anything else that emulates a baked good. I’m actually totally fine with not having any of that, but that’s besides the point. I do realize that many of you do so this is a healthier option for you.
You’ll notice some other cookies pictured. I’m still working on improving those recipes due to the nature of bounce they had when they hit the floor. Back to the drawing board. This took a few attempts and improvements to get the feel that I was going for. I think the outcome best accomplishes what I was aiming for. You be the judge.
Ingredients:
1/4 c coconut flour
1 egg
1/2 cup Ghirardelli dark chocolate chips
1/2 c almond butter
1/3 c agave nectar
1/2 c unsweetened applesauce
1 tsp vanilla
4 scoops Vanilla protein powder (Herbalife Protein Drink Mix Vanilla)
Preheat oven to 350 degrees
Whisk egg and combine all other wet ingredients. Fold in your coconut flour and whey powder until combined but do not over mix. Spoon onto greased baking sheet in 1″ balls and gently press down to flatten a bit.
Bake at 350 for 10-12 minutes.
