Sometimes when I’m at a loss (let’s be truthful here, it happens frequently) I just instinctively throw some ingredients together that seem complimentary. Sometimes it works and this dish is the perfect example of that. These days my brain is working on overdrive to keep my husband and kids happy and myself motivated.
My figure show prep definitely takes it’s toll both mental and physical so any additional thinking I can eliminate from my day is a real plus. I’m pretty anti-social at the moment so staying in and throwing together a healthy Paleo meal is what I’m down with. *Please forgive me friends that think I’ve vanished. I’ll be back when I can string a sentence together. Should flow more plentifully when I can get back on my wine bandwagon.
Ingredients:
- 1 lb ground chicken
- 1 tbsp coconut oil
- fresh grated ginger (to taste)
- 2-3 c spinach
- 1 large onion
- 2-3 c cauliflower
- 1 tsp turmeric
- 1 tsp cayenne
- dash of sea salt
- dash of pepper
I stir-fried some ground chicken in coconut oil along with the cauliflower, spinach, onion and dry spices and ginger. This actually had really good flavor. I think the fresh ginger is a real plus if you have it. Don’t skimp, your worth it!
