StrongGirl Pumpkin Spice Protein Cakes


  • 4 eggs
  • 2 scoops StrongGirl Vanilla Ice Cream protein isolate powder
  • 2 tsp pumpkin pie spice
  • 1 C almond meal
  • 1/2 C organic canned pumpkin
  • 1/4 C Almond Milk (more if mixture becomes to thick)
  • 1 tsp vanilla
  • 1/4 C agave to sweeten (optional)
  • 1/2 C dark chocolate chips (optional)

In a large bowl, whisk eggs and incorporate all other ingredients. In a large pan coated with coconut oil or cooking spray, make pancakes the size you prefer and carefully cook over medium-low heat until edges bubble slightly. Flip and cook for a few minutes longer. Top with honey, pecans, almond butter or whatever you’d like.

Makes 10-14 pancakes
