In honor of cooking and baking with lots of pumpkin lately, I’ve created these tasty, healthier variety of cookies using whey protein. They were moist and delicious and so pumpkiny! I used Metabolic Nutrition’s Protozyme Whey in Vanilla Cake, but you can use any vanilla whey you have.
Feels like fall, even Phoenix thinks so!
Pumpkin Protein Cookies
Ingredients:
- 1 scoop Protizyme Vanilla Cake Protein Powder (or any brand vanilla)
- 1 cup almond meal
- ¼ tsp. baking soda
- 1tsp pumpkin pie spice
- 1 egg
- ½ cup raw organic honey
- 1 tsp. pure vanilla extract
- ½ c pumpkin puree
- ½ cup dark chocolate chips (optional)
Directions:
Preheat your oven to 350 degrees
Combine your dry ingredients in one bowl and your wet ingredients in a separate bowl. Once both are well combined, stir the wet into the dry and incorporate fully. Spoon onto a cookie sheet lined with parchment paper and bake for 11-13 minutes.
To make your own pumpkin pie spice:
- 4tbsp ground cinnamon
- 4 tsp. ground nutmeg
- 4 tsp. ground ginger
- 3 tsp. ground allspice
