spicy chicken

I love spice and heat in nearly everything I eat.

I try to use it as much as possible.  If you’re in a hurry and have some ground chicken or turkey on hand, this is a great recipe to try.  It’s especially simple if you keep lots of frozen veggies on hand.  I used to buy tons of veggies early in the week with the best of intentions for meal prep.  As the week went on, I either forgot about the dish I was to use them in or ate out if it was a busy night.  They’d end up rotting in the vegetable drawer.  Total waste of money.  This way, they are always available.  Besides, many frozen vegetable are flash frozen at the height of freshness so they are just as good as the fresh ones.  Why not make your life a bit easier.  You can even still buy organic.

For this recipe:

1 lb ground chicken or turkey
1 bag of cauliflower
2 scallions
Sriracha hot sauce (my favorite)
1 tomato or 1 can diced tomatoes
turmeric
1 tbsp coconut oil
1/2 yellow onion
1-2 cloves of garlic

In a sauce pan, heat and coat with coconut oil.  Saute your onions and garlic.  Brown up your chicken in the same pan.  While cooking, season with turmeric and Sriracha . When cooked thoroughly, add your cauliflower and tomatoes until soft.  Serve and garnish with chopped scallion and more Sriracha if you dare.
