 zucchini chips

Happy New Year!  I can hardly believe its 2014!  To me that sounds so futuristic, but I’m a nerd so go figure.  Hope you celebrated and enjoyed yourselves and are ready to show 2014 who’s boss.  Any takers?  Let’s collectively kick it in the berries!

I love baking these up for friends and family.  Dirty mouth, clean it up!  Get some clean food in the house and prep it up so you can have better choices available.  If you have holiday treats around still, give it away or throw it out!  Let’s do this!

Ingredients:

  • 4-6 zucchini
  • 2 tbsp olive oil
  • salt, pepper and garlic powder to taste

Directions:

Preheat oven to 400 degrees.

After washing your zucchini, slice into 1/4 inch think pieces and toss in a large bowl.  Drizzle with olive oil and season to taste with salt, pepper and garlic.  Toss to coat thoroughly.

Place on a lined cookie sheet in a single layer and bake for 20-30 minutes until browned and crispy.
