Ever notice when you are feeling under the weather, its easier to slip up when it comes to your diet? Eating clean is a mind set and when you don’t feel like yourself, its definitely more difficult to stay on track.  I was feeling kind of junky when I woke up this morning and I usually tell myself its just mental, but I really could feel the physical element creeping up on me.  Pushing fluids and vitamins today and just taking it easy. I was in the mood to bake this for myself.  I tried not to eat it all.

I really liked the way the Paleo Pumpkin Bread recipe turned out recently and wanted to make a banana bread too.  I wasn’t feeling too creative so I found this recipe from Robb Wolf.  Although there are many ways to make Paleo banana bread, this one is killer!

Ingredients:  Makes 1 loaf or 12 muffins

  • 1 1/2 cups almond flour
  • 2 tbsp flax seed
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • pinch of salt
  • 1/4 tsp nutmeg
  • 1 tbsp olive oil
  • 2 tbsp honey or agave nectar
  • 1/2 tsp vanilla extract
  • 2 ripe bananas mashed
  • 2 eggs
  • 1/4 cup walnut (optional)

Directions:

  • Preheat oven to 375 degrees
  • Sift dry ingredients together
  • In a separate bowl, add egg, vanilla, honey and mashed bananas and mix well (I used a mixer or a hand mixer would be great too)
  • Add wet ingredients to dry and combine well
  • In a greased loaf pan (or greased muffin tins) fill and bake for 30-40 minutes for a loaf or 20-23 minutes for muffins
  • Great with butter or coconut oil spread on top
  • Enjoy!
